Terri Mercieca

Australian born Terri Mercieca is an accomplished dessert chef, pastry consultant, artisan chocolatier and the founder of Happy Endings, a luxury ice cream business. Terri’s surname is an anagram of ‘ice-cream’, so it seemed destined that she would end up being an ice cream maker. Since 2014, Happy Endings has turned the London dessert scene on its head using modern and traditional techniques to create desserts that are bold in flavour, temper sweetness with savoury and balance textures. As well as supplying restaurants, Happy Endings sell their signature ice cream sandwiches at events and festivals.
